Pickles & Coffee

I’ve never eaten a pickle and I’ve never had a cup of hot coffee.
My husband doesn’t believe me about the pickles. He insists that I must have eaten a pickle or two, even on accident, in a McDonald’s hamburger as a kid. But, I swear - I’ve never had a dill pickle before! At this point, it’s a matter of principle. I’ve gone this long without a pickle, so why start now? Mostly I just like to shock people with my declaration of lifelong pickle abstinence.
As for the coffee, a few years ago I decided to initiate myself into the mysterious world of coffee and try a Decaf Mocha Frappuchino from Starbucks. It upset my stomach instantaneously. Thus, I drew the conclusion that a hot cup of plain coffee could only do worse damage to my tummy. I don’t intend to ever have a cup of hot coffee. I drink tea, regular Coke, and Red Bull for my caffeine. I think that’s enough!

But, I don’t want to use this post just to scare you all with my food idiosyncrasies. So, to that end, I’m including one of my favorite recipes that is majorly enhanced by the rich taste of coffee – the Barefoot Contessa’s Outrageous Oreo Crunch Brownies. These are legendary. If you have never made them before, what are you waiting for?
Outrageous Oreo Crunch Brownies

Makes 20 brownies
INGREDIENTS
• 4 sticks butter
• 1 pound semisweet chocolate chips
• 6 ounces unsweetened chocolate, chopped
• 6 eggs
• 3 tablespoons instant coffee granules
• 2 tablespoons vanilla
• 2 1/4 cups sugar
• 1 cup plus 1/4 cup flour
• 1 tablespoon baking powder
• 1 teaspoon salt
• 4 cups chopped Oreo cookies (50 cookies)
Arrange a rack in the middle of the oven and preheat to 350°. Butter and flour an 11 1/2″ x 17 1/4″ x 1″ baking pan.
In a heatproof medium bowl set over a saucepan of simmering water, heat butter, chocolate chips and unsweetened chocolate until melted and smooth. Allow to cool slightly.
In a large bowl, whisk eggs, coffee, vanilla and sugar. Blend chocolate mixture into egg mixture; cool to room temperature.
In a medium bowl, sift together one cup flour, baking powder and salt. Add flour mixture to chocolate mixture. In a small bowl, stir Oreos and remaining 1/4 cup flour. Add Oreo mixture to chocolate mixture. Pour batter into baking pan and smooth top with a rubber spatula.
Bake 35 minutes or until a toothpick inserted 3 inches from center comes out clean; do not overbake. Allow to cool. Refrigerate, tightly wrapped, until cold; cut into squares.

well THOSE are low fat!
i’m going to make them anyway. soon. because once in a while you gotta indulge. only i might use something other than oreos becuase they give huby migraines. and i can’t sit there getting FAT alone can i?

Honestyrain - Ina based this off another recipe which instead of oreos she used Walnuts (which she did on her show on FoodTV)

Hi Beth - Try as I might - there’s nothing “mainstream” that I haven’t tried. Possibly based on my Mother’s command that I try everything once….. And I have paid the price for that! Food idiosyncrasies are what makes us individuals. Here’s to a nice juicy pickle with some Sumatra…BTW, I’m assuming you never had Kim Chee, or Tsukemono? Those are pickles….

I made these brownies–the walnut version, not the oreo version–just two weeks ago. They always go over well. Actually, I used one of these to taste wines with as I prepped for Wine Blogging Wednesday 13–they go GREAT with Merlot and Port!

Well, you shocked me! How could you never have eaten a pickle? I feel so sorry for you. One of my favorite childhood food memories is going to the General Store on Main Street in Disneyland, pulling a big, briny pickle out of the barrel and sucking on it all day long. I’m not kidding–a pickle is a thing of beauty. Please, try one!
