that sounds both yummy and simple - I was expecting that you had to make the fritters and then layer them with something in a casserole?? But that works for me! I don’t think corn muffin mix is that common here but maybe I can find some or just make up from scratch. And I’m totally with you on the full-fat cheese thing!
