The Most Amazing Buttermilk Pancakes

Oh and remember when I vowed that I wouldn’t gain my traditional 5-10 pounds this holiday season? Well, I am quite happy to report that I didn’t gain any weight from all of the festivities, most specifically the last 3 days since my sister’s been in town and staying at my house. We’ve been over-the-top gluttonous for 72+ hours now and when I reluctantly hopped on the scale this morning, there was no damage done!
I think it was truly a Chanukah miracle!
Still, I’m looking forward to a quick return to my healthier eating habits. Even though the scale says I’m in the clear, I still feel gross and I am so ready for my veggies, quinoa, oatmeal, tea, etc.
One of the reasons I feared the scale this morning is these Buttermilk Pancakes. I thought I knew pancakes pretty well because my dad made them every Sunday for our family as I was growing up. But I never knew that pancakes could be so ridiculously indulgent and phenomenally scrumptious as the ones made with this Williams-Sonoma recipe. I mean, come on! There’s melted butter in the batter!
Buttermilk Pancakes
From Williams-Sonoma
Makes 12 pancakes; serves 4
Ingredients:
2 eggs
2 cups all-purpose flour, sifted
2 Tbs. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 cups buttermilk
4 Tbs. (1/2 stick) unsalted butter, melted
1/2 tsp. vanilla extract
1 to 2 Tbs. vegetable oil or nonstick cooking spray
Maple syrup for serving
Directions
In a bowl, using an electric mixer, beat the eggs on medium speed until frothy. Add the flour, sugar, baking powder, baking soda, salt, buttermilk, melted butter and vanilla. Stir just until the batter is smooth and no lumps of flour remain; do not overbeat.
Heat a griddle over high heat until a few drops of water flicked onto the surface skitter across it. Lightly grease the griddle and the inside surface of the pancake molds with vegetable oil, or spray with nonstick cooking spray. Set the molds on the griddle and heat until hot.
Pour about 1/3 cup of the batter into each mold. Cook until bubbles form on top and the batter is set, about 2 minutes. Remove the molds and, using a spatula, flip the pancakes. Cook until golden brown on the other side, about 2 minutes more. Keep warm until all the pancakes are cooked.
Repeat with the remaining batter, adding more oil to the griddle as needed. Serve with maple syrup.

Hey, congrats on the no weight gain. I think I gained one pound only, which is nothing. My weight fluctuates up or down a pound or two all the time. Woo hoo. We both did it.

Happy New Year and congratulations! Wish I could say the same–between traveling and the holidays I am feeling quite full and ready to cut back a little.
Hey, this is almost identical to the pancake recipe I use, except I adapted mine from Marion Cunningham’s Fannie Farmer Cookbook. It’s a good one. I use less baking powder and substitute 1 c. of whole wheat flour for 1 c. of the AP flour, just to make it a little healthier and give it more texture. But then my kids like to add chocolate chips, just like in your photo!
